Summertime Happenings

Down 24 pounds now. 20 to go until my goal weight for TTC. DH is ahead of me a bit and doing fantastic too. He’s had a billion people notice and has had to change jean sizes and is about to do it again. Me? I’m flopping around in my shoes. Sigh. Okay… waistbands seem a bit loose now too.
Getting tired of the rigidity but used to the low carb thing. It’s been 6 weeks since we started Atkin’s! My new friends are Joseph’s lavash bread (you know… those cute circle mini rolled-up sandwiches?) at 4 carb per 1/2 sheet (think 6 inch sub size) and Russell Stover’s sugar free candies (carmel drops, mint patties and peanut butter cups!!!! Choc truffles weren’t nearly as good). I really can’t go much above 20 carbs per day but DH can go to at least 30. While I snack on macadamia nuts and meat during the day he has 7-10 carb lunches at work.
I made a WONDERFUL lasagna last night with 10 carbs per 1/8th of a very large pan. Low carb pasta is the closest to the real deal. The lavash is great too but other bread substitutes just don’t cut it for me.
My body isn’t going to know what hit when I get morning sickness and all I can stand to stomach is mashed potatoes. LOL.
Still Wii Fitting… who knew my favorite game would be boxing? ROFL. My arms hurt!! I also like the step aerobics but wish they had another set of them to try. The most advanced one isn’t near long or challenging enough. Brendan loves the games too- he’s rather good at beginning boxing too!
Bren is doing wonderful with Kindergarten. Today is day #125. He is 3/4 complete with his 1st grade phonics and finishing up lesson #21 in Math-U-See. We’ve been studying ants and have the neatest blue gel ant colony. 😀 I’ve been reading various science things and Junie B. Jones books to him.
I have my first homeschool conference this weekend. It includes a used curriculum sale, speakers on various topics and vendors. Hopefully I can get MUS Alpha a little cheaper there plus see some neato things. Nothing else, I’ll get a day with my own company and possibly meet some others.
Brendan is 55 pounds now. He is loving a PS game called Sonic Racers. His cartoon list of faves is the same… but I think he is tiring of them. We recently bought a T-ball set and he really likes hitting balls. He makes Andy fetch them and they both love it. Darrell took him to a Mission’s game too and he got to run the bases.
Andy has chunked out a bit. He is much better of an eater than Bren but less consistent. He may love salad one night but turn his nose up the at it the next night. He is loving little cars and trucks, Wubbzy, and anything that comes as a lot of little things in a bag to dump and sort. LOL. We did his first work pages today- drawing a slightly curved line from along a path from one object to another and coloring in a white circle on a colored picture (like a red spot missing on an apple). He loved it!
Andy’s 2nd birthday is less than a month away. I can’t believe it. I’ve already bought tickets for the Ringling Bros. circus in Ft. Worth. I’ve also bought a neat kit to make a circus train out of cupcakes called “Wilton Puzzles Cakes”. It’s a bunch of different shapes of cupcakes that you connect togather and frost like a cake. Then just pull them apart to serve.

3 strips cooked bacon, crumbled

3/4 cup heavy whipping cream (5.25)
1/2 cup instant mashers (Dixie Diner brand) (4)
1/2 c grated fresh parmesean cheese
2 c kale greens, chopped (10.8)
Fry sausage in large soup pot like hamburger meat. Do not drain. When the meat is cooked, add the garlic, broth, water, bacon, pepper and potatoes. Boil about 15 minutes, or until potatoes are done. Add the cream, instant mashers, parmesean cheese, and kale. Simmer 5 minutes.
1/4 = 9.25 carbs

Corned beef hash
1 pull-can corned beef (6, Big Lots)

Sausage Balls (goes well with a soup)
1 lb breakfast sausage, regular or light (0)
12 oz shredded colby-jack cheese (1.2)

Mix all together well. Make 24 balls. Bake at 400 for about 14 minutes.

Spanish Rice with Chicken
chicken tenders and/or pork chops marinated in Mexican spices, panfried and diced:
chile lime
lime juice or true lime
1 head of cauliflower, riced and microwaved (15)
1 cup HEB mexican diced tomatoes + 1T chk bouillion, pureed (8)
1/3 green bell pepper, chopped (2)
2T green chilies (2) or a chipotle pepper
2T powdered dehydrated tomatoes and peppers (5)
1T butter
canola oil to fry
mix with cheese & cilantro at the end (1)
1/3= 11 carbs
1/4= 8.25
Eggplant Parmigiana
1 eggplant, sliced into 16 slices, salted and drained (12)
2 eggs
1/2 pkt Bakesquick (10) mixed with
1 cup parmesan cheese (4) (coating)
2/3 jar Bella Vita Tomato Basil sauce (16)
2/3 roll Owens italian sausage, crumbled and cooked
1.5 cups Havarti and mozzarella cheese shreds (2)
1/4 batch = 11 carbs
Dip in egg and then coating mixture and then let sit for 20 minutes and dip in coating again. Fry in canola oil until browned on both sides. Layer eggplant, sauce, sausage and cheese in casserole dish. Bake 20 minutes at 375.
Use remaining sauce and sausage for spaghetti for the boys.
2 eggs (3 was too much)
8 oz cream cheese
1/2 cup butter
1/2 cup heavy cream
1 lb grated sharp Cheddar
1 lb grated Mozzarella
1 box Dreamfields brand low carb elbow macaroni
Preheat oven to 350°F. Prepare a 2 quart baking dish with spray oil. Cook Dreamfields pasta as directed on box, drain and set aside to cool slightly.
In a blender, combine eggs, cream cheese, butter and heavy cream until smooth. Fold this mixture into the cooked macaroni until well coated.
Place 1/2 cooked macaroni noodles evenly in baking dish. Top with mozzarella cheese. Add remaining macaroni and top with cheddar. Bake for 1 hour, first half covered. The top layer of cheese should be browned slightly.
Total Net Carbohydrates = 66.72
Net Carbs For 1/8 = 8.34
Shrimp and Asparagus Scampi over pasta
1 box HEB shrimp scampi
1 batch trimmed asparagus (1 1/2 c, 6 carbs)
2 servings Dreamfields spaghetti (10)
1/2 batch= 8 carbs
YUM! Boil asparagus with pasta last 2.5 minutes, add pasta and asparagus to shrimp when halfway cooked.

Better Than Crisp Bread Flax Cracker
2 Tbsp flax seed meal
2 Tbsp water
spices to taste (optional)
In a bowl, mix flax seed meal with water and spices (I use a fork). Let rest 2-3 minutes.
On a piece of parchment, press and gently spread the mixture with a fork, until the shape desired (usually a 4″ X 8″ cracker, but can be round or other shapes as well). Microwave for 2.5 minutes or until cracker is solid.
Let cool.
Top with cream cheese, taco dip or anything you might be hankering for.
Makes one lg cracker.
