I made Darrell a rather awesome birthday cake yesterday. I created it from a memory, lol. The idea is not mine but the actual recipe pretty much is. I wish I knew the real name for it. Then I could find the recipe and see how close I came. Haha. It is a strawberry cake with real strawberries in it topped with sweetened strawberry juice that’s allowed to soak into the cake. The end result is very similar to pineapple upside down cake- except not pineapple and not upside down. LOL.
Strawberry Glazed Strawberry Cake
white cake mix (I used Pilsbury)
3/4 c water
1/2 c oil
4 eggs
1 sm box strawberry jello
1 24 oz tub frozen sweetened sliced strawberries, thawed
3/4 c powdered sugar
Preheat oven to 350. Spray 9×13 pan with cooking spray.
In a small bowl, strain half of the tub of strawberries to remove the juice. Add the juice back to the other half.
Beat eggs in a large bowl with a mixer. Add cake mix, water, oil, box of jello and the strawberries that the juice was removed from. Mix until blended and pour into pan. Bake for approximately 35 minutes or until done.
While the cake is baking, blend the reserved strawverries & juice along with the powdered sugar in a blender until liquid.
Allow to cool for 10 minutes then poke the cake with a fork about every inch along the cake’s surface. Pour the strawberry topping over the cake and spread evenly. Cover with plastic wrap and refrigerate overnight or at least 4 hours.
Very moist and yummy. Great for people who are not fond of frosting (and those who are as well, lol).
